Never fear! A solution is here in the form of little homemade 'lets only go half the mile' pizzas.
I have made these before quite a few years ago- I made them on a whim at lunchtime one day in the holidays.
I remember texting my mum as I was eating them, telling her how delicious they were. She was very jealous.
I used red pesto and oregano as the sauce for these pizzas, but I dare say that making your own sauce is barely any trouble to go to. If you do feel like making your own sauce, here's a recipe to go by (bare in mind you will have a fair bit left over, but it's delicious and can easily be mixed in to other sauces):
- One 400g tin chopped tomatoes
- 2 garlic cloves, minced
- Oregano
- Salt
- Sugar
- Freshly ground pepper
- Tomato puree
This is a super simple and super effective sauce. Simply heat all the ingredients together to infuse all the flavours. Add the seasonings, oregano and tomato puree to taste- remember the sauce should taste stronger than you think. Any sauce you make will be diluted by what you are using it on, so always make the flavour stronger than you think it should be, however, at the same time, be careful to maintain the balance of flavours.
For the little pizza bases:
- Sliced brown bread- however many slices you cut is how many pizza's you'll get.
- Eggs, beaten- one slice of bread will soak up about half an egg.
- Pinch of salt and freshly ground pepper (mixed in with the egg)
- Preheat the over to 220c
- Cut off the crusts of the bread and discard.
- Place the beaten egg in to a bowl.
- One slice at a time, lay the bread in the egg, and let it soak for a few seconds- flip the bread and soak the other side.
- Line a baking tray with non-stick foil and place the soaked slices of bread on top.
- Bake the bread for about 5-10 minutes on each side, so that the bread is no longer soggy, and is taking on some colour and crispiness.
- Remover from the oven and top with your sauce and a topping of your choice. I used sliced mushrooms, red onion, tomato, red pepper and sweetcorn, but go for your favorite pizza toppings.
- Sprinkle each slice with a little cheddar or mozerella cheese.
- Turn up the over to as high as it will go (e.g. 250c)
- Bake the slices for a further 10 minutes until the cheese has melted and golden brown.
- Serve with a rocket salad and/or chips.
