Ingredients:
- 200g rocket leaves
- 200g peas
- pinch salt and sugar
- freshly ground black pepper
- pinch dried oregano
- 75g pasta
- 4 sausages
- one garlic clove, minced
Method:
- Place the peas and rocket in a medium pan with a little water, that covers about a quarter of the green leaves/veg.
- In a non stick pan, heat a little oil on a medium heat, and add the sausages.
- Boil the kettle, and fill a medium pan with the boiled water, placing it on a high heat.
- When the peas and rocket have softened, blitz them using a hand held liquidizer, and add the sugar, salt and pepper, minced garlic, and oregano. Let this simmer, but keep an eye on it, until the rest of the food it done.
- Check the sausages, make sure you keep turning them in the pan, browning them on all sides.
- Add the pasta to the boiling water and let it cook for the time suggested on the packet.
- When the sausages and pasta are cooked, drain the pasta and mix in with the pea and rocket mixture in the pan.
- Cut the sausages in to bite-sized chunks.
- Place the pasta mixture on to a plate, and top with the sausages, avoiding the excess fat (leave that in the pan to be thrown away later)
- Enjoy your yummy eat.
