I used the same recipe for the meat as last time, since it worked so well. The only difference was this time I used lean minced beef, but it didn't seem to make a difference to the flavour or texture at all so I see no problem in using it- just health benefits!
I decided to use the kind of peas i used in the Gnocchi with peas and chorizo, except mashing them rather than blitzing them,
using less water, less peas, and only half a garlic clove. It added a really nice sweet freshness to the meat which I didn't quite manage last time with the carrot puree.
I also used non-melted cheddar cheese in these burgers, which I'm not so sure about- the flavour was stronger, and didn't quite compliment the rest of the burger, so I think I would try mozzarella cheese next time.
The next addition was the sliced tomatoes, which was aesthetically very pleasing, but cant say much about what it added to the dish. I would not rule them out though- just try them with different combinations of fillings. I'm still missing a different texture/rich/spicy flavour in the burger, so I would like to try really crispy smoked bacon, or chorizo in the burger to add that extra yummyness.
The overall verdict: I liked the addition of peas-but its still not perfection. There will be more burgers in future!
